Vietnam Travel Tips: The North-to-South Route, What to Eat & Honest Advice for First-Timers

Vietnam is one of Southeast Asia's most rewarding destinations — extraordinary food, dramatic landscapes, a complex and fascinating history, and enough variety to fill weeks of travel. First-timers often don't know where to start. This guide covers the key decisions.

North to South or South to North?

Most travellers do Vietnam on a north-to-south or south-to-north route, starting from either Hanoi or Ho Chi Minh City (Saigon). Both work. The main considerations:

• Seasons: Vietnam is long and thin, so weather varies dramatically by region. The north (Hanoi, Ha Long Bay, Sapa) has a distinct winter (cool, sometimes cold, October–March). The south (Ho Chi Minh City, Mekong Delta) is tropical year-round. The centre (Hue, Hoi An, Da Nang) has a rainy season from October–January.
• International flights: Both Hanoi and Ho Chi Minh City are well-connected internationally. Flying into one and out of the other is easy and avoids backtracking.
• Rough time allocation: Hanoi 2–3 days → Ha Long Bay or Ninh Binh 2 days → Hoi An 3–4 days → Hue 1–2 days → Ho Chi Minh City 2–3 days. 2–3 weeks ideal.

Hanoi vs. Ho Chi Minh City

They're completely different cities and both worth time.

Hanoi — The older, more traditional capital. The Old Quarter is a tangle of streets named for the goods once sold there. Street food culture is extraordinary. Slower pace, more heritage, more French-influenced architecture.

Ho Chi Minh City (Saigon) — Fast, modern, entrepreneurial. More international, more expensive, less obviously "Vietnamese." The War Remnants Museum is one of the most powerful (and difficult) museums you'll ever visit. Ben Thanh Market. Great coffee culture.

Food: What to Eat Where

Hanoi:

• Pho bo (beef noodle soup) — Best eaten at a dedicated pho restaurant in the morning
• Bun cha — Grilled pork with noodles and dipping sauce; Hanoi's signature dish
• Banh mi — Vietnamese baguette with various fillings; everywhere and outstanding
• Ca phe trung — Egg coffee; a Hanoi invention, sweet and rich

Hoi An:

• White rose dumplings (banh vac) and cao lau — dishes unique to Hoi An
• Central Vietnamese food is spicier and more complex than the north or south

Ho Chi Minh City:

• Banh xeo — Sizzling crepes with shrimp and pork
• Com tam — Broken rice with grilled pork; a HCMC staple
• The coffee shop culture is extraordinary — spend time in a café

Getting Around Vietnam

Domestic flights are cheap and fast for long distances (Hanoi to HCMC is 2 hours; the train is 35+). VietJet, Bamboo Airways, Vietnam Airlines.

The Reunification Express train is one of Asia's great journeys — the slow option from Hanoi to HCMC takes 35 hours but the views through the central highlands and coastal stretches are spectacular.

Grab (motorbike or car) works in all major cities. Very cheap, very convenient.

Motorbike rental for exploring rural areas — Ha Giang in the north is best explored on a motorbike, as is the coast near Hoi An.
